'Jackass’ if you did not know - is another word for 'donkey' or 'ass' - hence the picture.
The name JackCass is a pun of the founder’s actual name "Jacob Cass". It was a repetitive joke throughout his life to be called 'Jack Cass' or ‘jackass’ and thus comes the name of the business. It is not in any way related to ‘Jackass’ the stunt tv show.
